Delicious Indulgence


Tonight I made a simple dinner. I wanted something quick and easy but healthy. So I decided on seared chicken breast with roasted potatoes and an arugula salad tossed in a homemade vinaigrette. 

The vinaigrette was ridiculously simple:

  1. Good quality Extra virgin olive oil (EVOO)
  2. Mustard
  3. Balsamic vinegar
  4. Freshly squeezed lemon juice
  5. Salt & pepper

Combine the ingredients to suit your taste and whisk together or use an air tight container. Whatever your prefer. I personally use a tiny glass jar that I up-cycled (it originally contained capers) as my ‘vinaigrette jar.’ This way I don’t have to worry able splitting oil and vinegar. A good shaking will do. 

I love simple meals that comes together rather quickly. Well, excluding the roasting time for the potatoes. It’s delicious, easy, and more importantly created with ingredients that I already had on hand.
